Vegan Veggi Filata Spaetzle

Preparation
Working time: approx. 35 min. / Cooking/baking time: approx. 15 min. / Difficulty: normal
Knead flour, egg substitute, oat milk, margarine, turmeric and salt into a firm dough. Add flour. The dough should not stick. Let the dough rest for about 15 minutes after kneading.
In the meantime, bring water to boil, add a little salt (not too much). If you use the grated veggi filata, you do not need additional salt. Turn down the heat to medium. Now shape the spaetzle into whatever shape you like. And gradually add them to the simmering water. When the spaetzle are done, they will rise to the surface and can be skimmed off. Keep skimming so that the finished spaetzle don't stick to the next batter.
When all the spaetzle are done, chop the onion and fry it in a pan with a little oil. Add the spaetzle to the pan and spread the vegan veggi filata on top. Spread some soy or rice cream over it and let the veggi filata melt while stirring. Add a little pesto for flavor.
